Mike's Carrot Cake
(Author Original Recipe)
 

Ingredients

1 C Oil
4 Eggs
3 C Grated Carrots
1 tsp Vanilla Extract
1 C Crushed Pineapple

2 C Flour
1.5 C Sugar
.5 C Brown Sugar
1 tsp Cinnamon
.25 tsp Nutmeg
1 tsp Salt
1.5 tsp Baking Soda
1 tsp Baking Powder
?allspice?
?nuts?
?cardamom?

Preparation

Sift together dry ingredients, except sugars.

Mix Oil & Sugar
Add Vanilla
Add Eggs, 1 at a time, mixing slightly after each one
Mix in Flour, etc, barely mixing
Stir in Carrots

Bake in 350 oven for 40-50 minutes.
